Pinterest Review: Cauliflower Crust Pizza

I really need to get better about reviewing all the things I attempt from Pinterest. The other day (translation: 2 months ago) I attempted Cauliflower Crust Pizza and actually remembered to snap a photo.

This crust was so easy to make. I bought a head of cauliflower from the grocery store with the intentions of trying this. I've never really been a fan of cauliflower but it's full of fiber and vitamin C. It imitates bread and mashed potatoes rather nicely and it makes it an excellent 'diet' food because it is low in carbs.

I made it for lunch for Chloe and I and it was a bit too much work for a lunch, but it would make a perfect accompaniment to a big leafy, green dinner salad. It took me about 30-45 minutes to get lunch prepared. I prefer lunches to take about 10-15 minutes.

I've also skipped the pizza sauce and cheese to make bread sticks with this recipe. Mark really enjoyed those. To make bread sticks, you follow all the directions for the recipe with the exception of the shape you make the crust. I divided the mixture into four even portions and shaped them like long oval breadsticks.

My tips:

  • If you don't have a food processor, you can use a cheese grader to slough off the top of the cauliflower into a bowl. 
  • Add more garlic. I love garlic. You can never have enough in my unprofessional opinion.
  • Make sure to take precautions to keep this from sticking. I have a non-stick Silpat, which I love, but the crust still stuck to the mat.
  • Don't put too much cheese on the pizza. The point is a lower calorie pizza and cheese is not calorie friendly.
  • Remember this serves two so you'll need to more than one head of cauliflower if you have more than two and half to feed. :)

  1. Yum! I've made mashed potatoes and even Shepherd's Pie with cauliflower, but hadn't tried the pizza crust yet. I'm going to have to share the recipe with my mom, my dad is diabetic and misses having pizza, so this would be good for him.

    1. I want to try making mashed potatoes with it. I use cannellini beans now and it works pretty well. I've never had a Shepherd's Pie. Am I missing out?

      Shepherd's Pie is basically ground beef, mashed potatoes or cauliflower, green peas/beens, and cheese on top baked in the oven. We like it and I prefer it with cauliflower over mashed potatoes.

  2. In a million years, I never would have thought to make anything like this with cauliflower - I am totally going to have to try this. I like the idea!! And its a slick way to get Julianna to eat a vegetable hahaaha

To answer your question, no, I don't leave the polarizer on all the time. Actually this was my first time using the filter, and I just experimented with it for a lot of my landscape shots. But the filter also blocks some light from hitting the lens, so I had to take it off for indoor shots. (I should mention that in the post...)
